Low Fat Nottingham Stew, a Low Fat Recipe for Stew

Serves 4 generously for about 175 calories each

This low fat stew recipe goes well with homemade bread or biscuits.

Stew Recipe Ingredients
2 LEAN Cubed Steaks
Salt & Pepper
4 Beef Bullion Cubes
1 Small Bag of Baby Carrots
1 Small Onion, chopped
2 Potatoes cubed into bite-sized chunks
½ Cup of Frozen Peas
Parsley – 1 teaspoon
2 – 3 Tablespoons of Cornstarch
Water

Add ¼ cup of water to a deep stew pot then add the steak which has been chopped into bite sized chunks. Add the onions, salt and pepper.

When meat sears the bottom of the pot should have golden brown color.  Immediately add 4 cups of water to the pot. Stir, scraping the golden meat drippings away from the pot.

Bring to boil and add the baby carrots - cook for an addition 10 minutes before adding the potato and peas. Allow stew mixture to cook for another 20 minutes or until done. In a small bowl, add water to cornstarch and stir to make a paste. Add to stew to thicken. Add parsley.
