Harvest Stew, a Low Fat Recipe for Stew

This stew recipe makes about ten servings which contain about 225 calories each. A serving size equals about 1 cup.

Harvest Stew Recipe

Add about 1 pound of lean beef to a deep stew pot along with 1/2 cup of finely chopped onion and a bit of garlic if desired. Salt and pepper to suit personal taste. Also add 2 cans of beef broth to the pot.

Add 1/2 teaspoon of pumpkin pie spice and 1/2 teaspoon of ground chili powder. Also add 1 cup of canned tomatoes and a bay leaf; bring to a boil.

Cover and simmer until meat is very tender. Then add 1 cup of peeled winter squash, 1 cup of cumed pumpkin and 1 cup of peeled potatoes and cook until vegetables are tender.

Thicken with cornstarch OR flour dissolved in water.
