Peter Pumpkin Cake Recipe

A Quick & Easy Recipe for Pumpkin Cake

Every year when fall arrives I get so excited about so many things that I love about the season. Beautiful fall colors, cooler temperatures, warm sweaters, snuggly blankets, hearty soups and breads on the table, fall squash - and pumpkin! I'm a pumpkin head when it comes to pumpkin as it's one of my favorite foods. Delicious as a soup - a pie and in our Pumpkin Cake recipe.

To prepare our Peter Pumpkin Cake recipe combine 2 cups of white sugar, 1/2 cup of vegetable oil, one regular size can of pumpkin and 4 raw eggs in a deep bowl until smooth. Next stir-in 2 teaspoons of baking powder, 2 teaspoons of baking soda, dash of salt, and 2 Tablespoons of Pumpkin Pie Spice. Slowly add the flour to the mixture. Finally add the nuts if desired.

Bake in a preheated 350 degree oven for about one hour - or until a toothpick can be inserted into the cake and it comes out clean. We recommend using a bundt pan for our classic Peter Pumpkin Cake recipe. A brown sugar or powdered sugar glaze on top of the cake also tastes divine for a few more calories.

Ingredients for our Quick Delicious Recipe for Peter Pumpkin Cake:

2 cups of white sugar

1/2 cup of vegetable oil

4 raw eggs

1 regular size can of pureed pumpkin

2 teaspoons of baking powder

2 teaspoons of baking soda

Dash of salt

2 Tablespoons of Pumpkin Pie Spice

3 cups of all purpose flour

1/2 cup of chopped pecans, almonds or walnuts (optional)
