Gourmet Potato Cakes, An Easy Potato Cake Recipe

Our recipe for Gourmet Potato Cakes is the best potato cake recipe in the world - hand's down. The base is our Gourmet Potato Soup - which is also absolutely delicious!

After enjoying Gourmet Potato Soup on one day, we make our delicious Gourmet Potato Cakes on the next day, so we always make a little extra soup. Our potato cake recipe produces light, fluffy, golden brown potato cakes filled with chunks of potato. No need to add additional salt and pepper unless more is desired to suit personal taste.

Begin by scooping-out four large serving spoons of the cold Gourmet Potato Soup and place into a medium bowl. Be sure to scoop the bottom of the soup which contains the chunks of potato.

Add 1 egg and incorporate into the potato soup. Next, add 2 Tablespoons of baking powder. Next, add 3/4 cup of all-purpose flour and stir to incorporate the flour and baking powder. Place by the spoon-full into a non-stick pan which contains about 4 Tablespoons of oil. We prefer peanut oil. Cook the potato cakes on one side until they are set and then carefully turn. Cook until golden brown, then turn to cook the other side to a golden brown stage. Serve with plenty of love and ketchup!
