My mother use to prepare this every time a holiday or special ocassion rolled around. Clean-up was never an issue as there weren't any leftovers. Better yet - this is one of the easiest asparagus recipes on the planet. To prepare, simply steam OR pan roast OR prepare fresh, frozen or canned asparagus. While asparagus is heating melt your favorite white cheese either on the stove top in a non stick pan, or in the microwave (if you're not using it to warm the asparagus!) using a little milk or cream to thin-out the cheese. Thoroughly drain the asparagus and place into a beautiful serving dish. Top with the melted white cheese. Sprinkle with a bit of paprika if desired for added beauty. Another great aspect of this recipe is that you can make as much or as little of this recipe as you wish. You can also top it with as much or with as little cheese as you wish. Therefore, ingredient amounts will vary. Just a couple of preparation notes: for every cup of grated cheese used, add 1/4 cup of milk for thinning purposes. Grated cheese will melt faster than block cheese. Slice cheese works well in this recipe.
