A quick delicious recipe for Enchiladas

Quick Enchilada Recipe, An Easy Enchilada Recipe

Our quick and easy enchilada recipe takes about 10 minutes to put into a pan - and about 15 minutes worth of baking time.

To prepare, grab a medium-size non-stick skillet. Using cooking spray, cook 1 dozen tortillas in the pan - one at a time, of course using more cooking spray if needed.

Next, remove pan from heat and add about 1 Tablespoon of olive oil. Be sure to clean the pan if needed before adding the olive oil - but be careful as the pan is hot. Return the pan containing the olive oil to the heat and add about 1 cup of finely chopped onions. Cook until clarified and drain off remaining oil.

Add a few onions and about 2 Tablespoons of shredded cheese of your choice to one side of each tortilla. Sprinkle on chopped or dried cilantro, then roll to form enchilada. Place into a deep baking pan that has been sprayed with cooking spray to prevent sticking. Set aside a few of the chopped onions which will be sprinkled on top of the enchiladas.

Next, top the enchiladas with your favorite spicy chili. Sprinkle the onions and more grated cheese on top. Bake in a preheated 400 degree oven for about 15 minutes or until hot and bubbly. Serve with your favorite chips and salsa.

Your favorite spicy chili - opting for light and low fat versions of chili will save calories and fat grams

Grated cheese - your favorite cheese; using low fat cheese will save calories and fat grams

1 dozen corn tortillas

Cilantro, fresh or dried (optional)

1 medium onion, diced

1 Tablespoon of Olive Oil

Cooking Spray
