Low Fat Cha Cha Chalupas - Cha Cha Chalupas - Low fat, low calorie Mexican Food for Your Diet Plan - Copyrighted by Diet Bites

These tasty babies are the cat's meow when it comes to Mexican food!  Each contain about 100 calories and minimal fat.  I'd recommend enjoying FOUR for lunch OR dinner.  

Enjoy your meal wearing your favorite sombrero.  Sitting on a donkey while dining, however, is not recommended.   Here's the simple, economical recipe:

Cha Cha Chalupas - the tasty ingredients for this low calorie, low fat diet recipe

1 box of flat Chalupa/Tostada Shells
1 can of refried beans (search for the ones lowest in calories/fat)
Shredded REAL Mozzarella Cheese (or use your favorite lowfat OR light cheese) (I like Mozzarella because it's pretty good fat-wise and very tasty!)
Large Bowl of Shredded Lettuce, Chopped Tomatoes, Diced Onions (optional), Bell Peppers (optional)
Hot Sauce - as much as you want
Chili Powder (optional)
Cumin (optional)
Chopped Cilantro (optional)
Spicy beans: mix the refried beans with a bit of chili powder and cumin (to your personal taste preference).

Smear 2 Tablespoons of beans onto a shell, then top with a bit of cheese and hot sauce.  Pop into a microwave oven or a toaster oven until cheese melts.  Carefully remove.  Top with salad mix and chopped cilantro if desired. Sprinkle just a tab more of cheese on top and add additional hot sauce if desired.

You may take your salad Southwest by adding a few sliced black olives, a few drained black beans, and a tablespoon of drained whole corn.  Garbanzo beans also rock on this great Cha-Cha dish.

Another way to enjoy the Chulapas is to add a bit of sour cream.  Be sure and cut back on the number you enjoy, as everything you add makes the calorie content go up.  And if the calorie content goes up, so do the numbers on your scales!
