Fat Free Potato Soup, Diet Friendly - a low fat, low calorie soup recipe for dieters

This low calorie soup is so good that it deserves a double 'e' on the end of it!  If you are trying to lose weight, this delicious soup makes a great choice.

There is nothing quite like a bowl of rich, warm, delicious soup to enjoy on a cold wintry day.  This quick low calorie, fat free recipe for potato soup is nourishing, delicious and uses 'normal' ingredients - the ones found in your kitchen. Simple yet divine! And you can enjoy it while dieting without guilt.

This diet delicious recipe for potato soup is so simple you may think you're making Rice Crispy Bars instead of soup! If you're in a pinch for time at lunch- or dinner - this will put a smile on your family's face and fill that empty spot in their tummies in a flash!  And it's nice to know that not only you, but your family is healthy too.

Yum Yum Low Calorie, Fat Free Potato Soup - It's full of yum yum!

Serves 1 for less than 200 calories & comes with zero fat for your diet.

1 potato, medium-size (about 120 calories)

1 cup skim milk (about 45 calories)

Salt & pepper (zero calories)

Calorie-free butter (such as I Can't Believe It's Not Butter or Parkay spray) (This is also optional.) (zero calories)

Before preparing your soup, remove any visible 'eyes' from your potato. By the way, these are poisonous and should never be consumed. Microwave the potato for about 5 minutes -or until done. Cool a few minutes then remove the peeling. Mash the potato with a fork and add the skim milk, salt & pepper to taste, and if you wish, the 'butter'.

Adjust the density of the soup to your own desire. You can make it thinner by adding a bit more milk. Or, you can make your soup ultra creamy by substituting 'light evaporated milk' (which is simply a reduced calorie creamer found with the creams at your local market).  

Serve warm with crackers or fresh bread if desired.  Flatbread is also very tasty with this soup.

For additional servings just keep increasing the ingredients per person.

Other optional ingredients: freshly chopped chives, cracked black pepper (the Texas-sized pepper), parsley flakes, bacon bits or one slice of real bacon that can be crumbled into your bowl.  Add an additional 35 calories for the bacon if it is microwaved.  If it is pan-fried, add the calories as listed on the box.

This soup keeps well in the refrigerated.  It also warms up very well.

The potato is an excellent choice when you want to enjoy something that is filling and that will stick with you for a few hours.  It also supplies your body with potassium - about twice as much as a banana!
