Rogue’s Low Fat Renos - Serves 4 generously for about 175 calories each

 Ye Old Ingredients
 4 Egg Whites
1/8 Cream of Tartar
1 Cup Egg Substitute
4 Canned Green Chili Peppers
˝ Cup of Chopped Tomatoes
8 Ounces of Monterey Jack Reduced Fat Cheese, Grated
 

Spray 4 small quiche dishes with non-stick cooking spray OR use one glass pie pan.

Beat egg whites & cream of tartar till stiff peaks art formed.  Next, fold in egg substitute & tomatoes. Pour ˝ of batter in prepared dishes.  Stuff peppers with cheese & arrange on batter.  Cover with remaining batter.

Bake in preheated 350 degree oven for 15 – 20 minutes.

Even more tasty when served with a side of refried beans.  This wilt add about 190 calories for a ˝ cup serving.

The biggest amount of calories comes from the cheese.  However, although there be a huge chunk of calories from the hunk of cheese, this be a meatless dish.  

The refried beans provide necessary protein & doeth not contain the smattering of fats that be laced within most village farm animals.
