Begin by cooking 12 ounces of macaroni as directed on the package and thoroughly draining. Using the quick-cook version of macaroni can save time. Add 2 Tablespoons of light margarine to the macaroni and 1 small bag of shredded reduced-fat cheese - reserving 1/3 of the bag which will be used to top the macaroni. Add salt and pepper to suit personal taste. Also add 1/2 to 1 cup of hot skim milk. Stir gently. Top with remaining cheese. Bake in a preheated 400 degree oven until cheese melts and is bubbly.
