Lady Godiva’s Tasty Pumpkin Bred Recipe - Low in Fat, Low in Calories

Lady Godiva’s Tasty Pumpkin Bread ‘tis so naughty tasting, but oh so low on calories & fat.  How can that be?  The fat hath been trimmed via use of applesauce which hath been traded out for oil.  Oil ‘tis loaded with calories & of course, fat – about 130 calories per mere teaspoon.  Yes, one more reason for a grown village dieter to cry.  But harketh!  Set aside thy lamentation.  The applesauce adds a moist texture to the cake & thee whilst nev’r miss that fatty oil.  Slick trick, isn’t it? That’s what the Court Jester told the newly knighted King.

But beware, thy good village dieter.  After consuming this tasty goody, thy might find thyself suddenly as thin as Lady Godiva herself & be prone to disrobe in the streets of thy village.  So please contain thyself, as it ‘tis very illegal these days.  New king. New rules, you see.

Ye Old Ingredients
1 Can of Pumpkin
2 Cups of Bread Flour
1 Cup of Plain Applesauce
1 Carton of Egg Substitute
1 Cup of REAL Sugar
24 Packets of No Calorie Sweetener
1 Teaspoon of Ground Cinnamon
1 Teaspoon of Ground Cloves
¼ Teaspoon of Ground Ginger
½ Teaspoon of Ground Nutmeg
1 Tablespoon of Baking Powder + 1 Teaspoon of Baking Soda
Non Stick Cooking Spray

Simply mix all the wet ingredients, then add the dry.  Spray a bundt pan, or two loaf pans with non stick cooking spray.  Bake in a preheated 350 degree oven till top of cake springs back when touched – about 40 minutes.  Top with a light dusting of either powdered sugar or cinnamon.
