Rise & Shine With Low Calorie, Low Fat Peachy King Breakfast Flatbread

Ingredients for Peachy King Breakfast Flatbread
1 - 1 Pound Bag of Frozen Peach Slices
2 Tablespoons of Dark Raisins (Optional)
2 Tablespoons of Golden Raisins (Optional)
6 Flour Tortilla Shells
6 Teaspoons of Brown Sugar
3 - 6 Packets of Splenda OR Equal
1 - 2 Teaspoons of Ground Cinnamon
12 Tablespoons of Light Whipped Topping
Non Stick Cooking Spray
No Calorie Refrigerated Butter Spray
Powdered Sugar
 

 Heat peaches in microwave on medium until warmed - about a minute and a half.  Take care not to overheat or peaches will disintegrate.  Allow to rest while you cook your 'flatbread'.

To cook flatbread, spray tortilla generously with butter spray.  Cook on medium heat in a pan sprayed with the no calorie cooking spray.  Cook until golden-crisped.  Flatbread should not be limp when removed from pan.  If so, return and slowly bring to that golden-crisped stage.  Next, remove and arrange in six snazzy saucers.  Add the cinnamon, Splenda, brown sugar and raisins to the peaches and stir gently to incorporate evenly. At this point, you may do one of two things:

1. With a slotted spoon, transfer the peach mixture onto the flatbreads and dollop with topping.  Dust with powdered sugar, if desired.

2. Drain juices from mixture (should have about 1 cup; if you don't then add apple juice or juice from canned light peaches to make up difference or a bit of water).  Heat juice until hot, then thicken as you would gravy.  I use a generous spoon of cornstarch that has been dissolved in a bit of water, then constantly stir when I add it to the hot juice to prevent clumps.  Add peaches.  Transfer mixture onto flatbreads and dollop with topping.  Dust with powdered sugar, if desired.  This makes a thick fruit topping for your flatbread.

- Sugar free/fat free yogurt may also be added rather than the topping for a healthier breakfast bread.

- If you are short on time, opt for reduced calorie cherry pie filling.  It's awesome!

- Flatbread may be cooked until golden, but not golden-crisped and then folded as one would an omelet.
