Ex Caliber Muffins - Low Calorie, Low Fat Muffin Recipe

Our low fat recipe for Ex Caliber Muffins easily accommodates muffin lovers who desire a Diet Infantry of tastes.  Just substitute ingredients as directed below to change Banana Muffins into Cherry Nut Muffins.  Now, how sweet is that?

Ex Caliber Low Fat Muffins - Ye Old Ingredients
2 Fresh Hen Eggs
½ Cup of Skimmed Milk
1 Teaspoon of REAL Vanilla Extract
12 Packets of No Calorie Sweetener
1 ½ Cups of White Flour
1 ½ Teaspoons of Baking Soda
½ Teaspoon of Crème of Tartar
1 Ripened Banana – Fully Mashed by Thy Tot’s Tootsie
1 Teaspoon of Ground Cinnamon
½ Cup of Light Brown Sugar

Preheat thy oven to 350 degrees.  Next, in thy mixing bowl combine milk, eggs, vanilla, sweetener, crème of tartar, baking soda & mashed banana. Slowly incorporate the white flour – stirring thy bowl of goodies with a gentle hand, not a barbaric hand or thy might produce 12 tough muffins. For this reason, village ogres oft ask their captives to stir the unfatted bowl in their stead.

Next, pour into muffin cups or a muffin pan.  Fill about ½ full.  Be certain to dust thy pans or cups with non stick cooking spray. In a separate teensy bowl combine cinnamon & brown sugar.  Sprinkle mixture on top of muffin cups. Transfer to muffin pan or cups & bake till golden – about 15 minutes.

Cherry Nut Muffins – Substitute ½ can of drained unsweetened cherries for the cinnamon & the banana.  Add ¼ cup of crushed pecans.

Chocolate Chip Muffins – Substitute ½ cup of powdered cocoa for the cinnamon & banana.  Add ½ cup of mini chips.

Pumpkin Pie Muffins – Substitute banana for ½ can of packed pumpkin.  Add ¼ teaspoon of ground ginger, ½ teaspoon of ground cloves & ¼ teaspoon of ground nutmeg.
